Let's Uncomplicate- Coffee!

I was at a café recently, standing behind a man who ordered his coffee like he was giving instructions for surgery. "Medium roast. Pour over. Not too acidic. Smooth finish." The barista nodded, calm and unfazed, as if this was just another Tuesday, which it probably was. While I’ve heard fancy versions of this abroad, I was rather surprised to hear this in Chennai.
I stood there thinking: same bean. Completely different drink. And somewhere between that order and my much less impressive "iced Americano, please," it struck me. Same bean, so many ways to drink it! And while each one of us have our favourite ways of having coffee, it might be interesting to see what going on behind that cup! The chemistry, the biology, the physics - well, coffee extraction is fascinating science.
Coffee, stripped of its romance, is brutally simple. A bean. Ground. Water passed through it. That's it. And yet, in that deceptively simple act lies a quiet kind of alchemy, because water doesn't just extract "coffee." It extracts specific compounds, in specific amounts, depending entirely on how you treat it: how hot it is, how long it stays in contact, how much pressure you apply, and crucially, what you run it through. That changes everything. The taste, yes, but also the chemistry of what ends up in your cup and, by extension, in you.
The Espresso: The Aggressor
Take an espresso. It's impatient. Almost aggressive. Hot water, forced through tightly packed coffee under pressure in under half a minute. What you get is concentrated, sharp, and unapologetically intense. It doesn't arrive quietly. It announces itself. The caffeine hits quickly, the effect feels immediate, and you don't so much sip an espresso as survive it. It's the kind of coffee that doesn't ask if you're ready. It doesn't care.
And if espresso feels like too much commitment, along comes the Americano: espresso with water added back in, which is either a very civilised way to slow things down or a complicated way to end up with the coffee you could have just made at home. I say this with affection. The Americano is the introvert of the coffee world: it just needs a little space.
The Pour Over: Our Balanced Friend
Contrast all of that with a slow pour-over. Here, nothing is rushed. Water moves gently through the grounds, pulled down by gravity, extracting compounds layer by layer. It's less about force, more about persuasion. The result is cleaner, softer, more articulate. You don't just taste "coffee." You start noticing things, acidity, sweetness, something that someone once described as "notes of citrus," which I'm still not entirely convinced about, but I'll allow it. Here's where it gets interesting from a chemistry standpoint: the paper filter does something quietly important. It traps diterpenes, a class of oily compounds that includes cafestol and kahweol. These molecules are fat-soluble, which means without a filter they pass straight through into your drink. With a paper filter, they don't. Your cup is cleaner in ways you can taste, but also in ways you can't.
The French Press: The Anarchist
And then there's the French press, which does not believe in boundaries. No filter. No restraint. Just coffee sitting in water, everything dissolving freely. The result is heavier, fuller, slightly chaotic, and deeply satisfying in the way that slightly chaotic things often are. You're not just drinking coffee, you're drinking the oils, the sediment, the parts that other methods politely remove. And in those oils live cafestol and kahweol, those diterpenes the paper filter was quietly holding back. Now they're in your cup.
The Cold Brew: Zen Mode
Cold brew, on the other hand, is almost patient to a fault. No heat, no pressure, just time. Hours of slow extraction in cold water, quietly pulling out what it can without the bitterness that heat often drags along with it. The result is smoother, lower in acidity, and noticeably easier on the stomach. For people who say coffee "doesn't suit them," this is often the version that suddenly does. Not because the coffee changed, but because the extraction did.
The Part Where We Pretend This Is About Health
These molecules sit at a genuinely interesting intersection. Some studies suggest cafestol can nudge LDL cholesterol upward in people who drink unfiltered coffee regularly. Which sounds alarming until you read further and discover that cafestol has also shown antioxidant and anti-inflammatory properties, and some research suggests it may be theoretically cancer-protective, possibly interfering with pathways that tumours use to grow. Theoretically. I’d love to talk about the CYP1A2 enzyme in your body, that kind of decides if you can take 1 cup and be wide awake, while someone else can take 10 cups and sleep like a baby, but that’s a topic for another day.

You're drinking it because it's one of the best things in the world and because the alternative is being unpleasant before 9am. The science is just a pleasant excuse to have another cup.
So back to the point. You can take the exact same bean and turn it into four completely different drinks, each with its own personality, its own pace, and its own chemical fingerprint. So when someone tells you "coffee doesn't suit me" or "coffee is brilliant for me," what they're really saying is: this particular version of coffee, extracted this particular way, did something specific to me.

Milk, sugar, oat alternatives, three pumps of vanilla: a conversation for another day, a therapist, or both. This was about the extraction.
One last thing. We've spent this entire essay treating the bean as a prop. A supporting actor, present but not the point. And mostly, that holds. But mostly isn't entirely. Because the bean does have things to say for itself, and some of them are actually worth hearing. Next time, we'll give it the floor.
